Oatmeal Peanut Butter Almond Pulp Cookies

2 cups almond pulp

3/4 cups soft butter (coconut oil hardened a bit would work as well)

1 cup peanut butter (smooth or crunchy)

1 cup white sugar (honey or agave)

1 cup brown sugar

2 eggs (skip the eggs for vegan)

1 cup whole wheat flour

1/2 cup white flour

1 cup wheat bran

1 tsp baking soda

2 tsp baking powder

1 tsp salt

1 tsp cinnamon

5 cups oats

Begin by beating pulp, peanut butter, butter and sugars until creamy.  Add eggs and beat again.

Add the rest of the ingredients and stir just until combined.

Using a small icre cream scoop (or spoon) place balls of dough on parchment lined cookie sheets.  Slightly press dough down with your fingers and push  a whole almond down a tiny bit in the middle of the cookie.   Bake at 350 degrees until cookies have turned a nicely brown.

Let cool and eat 6 or 7 with a big cold glass of almond milk.
