Barley Cakes

Spray a 1 1/2 to 2 cup ramekin (or a coffee mug) with a bit of oil spray.   In a bowl whisk 2 egg whites.  Add 1/2 tsp cinnamon, 1 tbsp chia seeds, a bit of stevia, 1/4 cup spiced barley and 1/4 cup pureed pumpkin (or apple sauce or mashed banana).   Whisk this into the egg whites and pour into the greased ramekin.    Bake in the oven at 400 F or toaster oven (the toaster oven took about 10 min for me).    It will puff up which is good, just check the centre and it should be firm.
