Chocolate coconut pudding pie

This is a dessert I came up with in a desperate attempt not to throw out my daughters home-made leftover oatmeal cookies.   Half the batch had raisins for her dad which were gobbled up in one night but the other half softened in a day and in doing so, lost their attraction. Not a problem though because these cookies got a second chance as a crust for a simple yet decadent pie.  I was actually able to kill two birds with one stone for this recipe because my kids also decided they were sick of the chocolate jello pudding that I purchased in copious amounts at Costco.

I had about 2 cups of crumbled cookies which I then mixed with 3 tbsp of melted butter and then pressed onto the bottom of a square cake pan.   Any cookie can be used for this including graham crackers crumbs.  Bake the mixture at 350 degrees until lightly brown.   Remove crust and let cool.  Melt 1 heaping cup of dark chocolate chips in the microwave or a water bath and spread onto the bottom of your cooled cookie crust.

Immediately sprinkle shredded coconut over chocolate (1/2-3/4 cup).  I then emptied 8 containers of fat-free jello pudding on top of coconut and spread evenly with another 1/2 cup of coconut sprinkled on top.   refrigerate until chilled
