Coconut Oaties

3 cups of oats

1/2 cup splenda (or white sugar)

3/4 cups coconut flour

1/2 tsp baking soda

1/2 tsp salt

1/2 cup coconut oil

1/3 cup apple sauce

1 egg

2 tsp vanilla

Place all of your dry ingredients into a food processor and blend until oats begin to break down (not into a flour but almost). Add wet ingredients and continue to blend until the dough forms into a ball.

You could probably roll this out between parchment paper and cut into shapes but I just rolled the dough into little balls and after placing on the cookie sheet I pressed each one flat.

Bake at 350 degrees until the edges begin to brown (maybe 10 minutes). Be careful not to over cook as my first batch was on the dry side.
