Dog Days of Summer

Or Sticky leg days of summer.  I can never decide what to wear when it gets like this.  Heavy jeans are out. I’m not a fan of capris and shorts leave my legs right out there for hot leather car seats, sticky plastic patio chairs and today……the dentist chair.    Covered in a thick plastic cover.  The drilling on my back molar combined with 33 degrees F and barely functioning air conditioning made for a hot mess.  By the end my bare legs were soaked from a combination of stress and a body temperature of 110 degrees.    It’s lucky I didn’t slip right off of the chair.

I also left a fresh coating of fake tan behind.  Take that dentist lady.

But enough of that!  In five months I’ll be complaining of frozen numb legs so let’s stick with all the best parts of summer.

Like Cherries!

My favourite fruit…right after blueberries 🙂  I’ve always found cherries a pain to bake with because of their pits.  No longer!  I’ve finally found a cherry pitter that works.   The man will now demonstrate.

I know I complained about these gadgets not working when I made this cherry cake….I take it back.   I found this at Crate and Barrel for only $10.  Bring on the cherries!

Whole Wheat Cherry Cake

  • 1/2 cup butter softened
  • 1/21 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 egg
  • 2 cups whole wheat flour
  • 1 cup unsweetened coconut
  • 1 cup pitted cherries cut in half


  1. Preheat oven to 375 degrees F and line a springform pan with parchment paper.
  2. Cream the softened butter and sugars together until smooth.  Add egg, vanilla and milk.  Stir well.
  3. Add flour, soda and salt and mix only until combined.
  4. Fold in coconut and cherries. Bake until centre is firm and brown.

I loved this cake.  Not too sweet with no spices which is perfect for mild tasting coconut and little bites of cherry. Next time I would use another 1/2 cup of cherries.   This batter is my new cake canvas, and I can think of 10 different combinations right now…..

I’ve got a serious cherry addiction going on.  Cherries and yogurt…cherries and steel-cut oats…cherries and barley bakes.  Until the farmers stop bringing them to the market….I’ll be eating cherries.

    Can you omit the coconut on it?

      Hi Sandra, sure you can leave out the coconut. Try adding 1/2 cup of shredded carrot or apple though (which you won’t taste) because since coconut is so high in oil, the cake may become dry without it. Either that or another 1/4 of butter/oil. Let me how it goes.
