Peaches and Dreams

I may have found a house today…..keep your fingers crossed 🙂

I can’t think of one single fruit that reminds me of summer more than peaches.  As a kid I had a love/hate relationship with them. The furry skin gave my tongue the creeps but the juicy, sweet flesh was so good.  I remember using my fingers to scrape off the peel as much as possible.

I won’t lie….I wish the food science guys would do a nectarine skin on the peach but I still love them which is why I now have 24 in the fridge from the farmers market.    A peach cobbler came to mind first but then my friend John sent me a picture of his version of my cherry cake recipe.

I think his cake looks perfect.  Aside from a little cherry disorganization.   

A perfect way to use up some peaches. I switched up the recipe a bit since John mentioned to me that he used half of the sugar and replaced even that with splenda.  Instead of butter I used coconut oil. Instead of quinoa flour, I used oat flour. Instead of sugar I used half the amount of splenda (as per John), instead of cherries…peaches and finally, instead of one cake, I doubled the recipe and made 7 muffins.

Now I’m messing around with my own recipes….

I’m loving my new silicone muffin cups.  I just spray them very lightly with pan and the muffins fall right out.

For the cherry cake, I sprinkled a bit of white sugar on top.  Brown sugar seems to pull the sweetness out of peaches better so I sprinkled about 2 tsp on each half slice of fruit.  Next time I would mix some brown sugar with 2 tsp of cinnamon.

If you have a  sweet tooth then I recommend adding another half cup of splenda or sugar.  We don’t like things too sugary and the man even agreed that the flavours all came together well and didn’t need it.       Next time I make this cake (and I will) I’m going to slice the peaches and fan them out around the cake.  Cutting it was a bit difficult with the big chunks and it would have been easier to eat.

I’d highly recommend a big dollop of either peach ice cream or yogurt on top of this.

Would you believe I woke up last night at 4 a.m. and couldn’t get back to sleep because of peaches???   I had a hundred recipes running through my head!

I dream of recipes for the blog sometimes. Usually I forget but not this time!

    You should call your blog “instead of”. Everybody dreams about what was on their mind that day silly! Have you ever peeled a peach using the boiling/ice cold water method? Its cool how easy it comes off this way.

      Hmm…instead of. Not bad. I actually forgot about that boiling method. Think I’ll try that tonight

    I’ve never had a dream about cooking – but I’m so glad you do. I immediately noticed the cherry disorganization as well. 🙂
