Papaya Breakfast Bowl

What a beautiful weekend.  Saturday morning started out rough but by the afternoon, I was lunching with two friends I haven’t seen in over a year and when we left the restaurant, it was sunny and warm.

If I was better at blogging I would have taken a picture of us and showed you what we had for lunch.   I always forget that part  :0).

We went to a Korean bb’q which was a first for me.  For those of you who don’t know, each table has a little gas hot plate in the middle with a huge vent on top.   You place your order of raw meat and veggies and then cook your meal.  We, however decided not to go that route since we thought it would be better with more people.   Instead we ordered sushi rolls and a huge bowl of noodle soup.

It was great and we’re all definitely bringing the guys along next time for dinner and doing the bb’q part.

I picked up a huge papaya on the weekend.  Papayas like pineapples are always a hit and miss with me.   I do my best to pick out what looks like a good fruit and 50% of the time I get home and cut it open only to find it over ripe.    This one was perfect.  I had mine in a shake and made Steve a breakfast bowl.

In a small pot, simmer 1/4 cup each oats, wheat bran and cream of wheat with 2 1/2 cups water or milk.     Add 1/2 tsp salt, 1 tsp cinnamon and 1 tsp vanilla.       Simmer until desired thickness (15-20 minutes).   Remove, add to a bowl and sweeten with stevia and add a dollop of coconut butter or your favourite nut butter.    Top with cubed papayas.

Cooking your grains slowly (stirring often) and with plenty of liquid allows the grains to gain volume making your serving huge.  I like my meals big and filling since I really don’t snack so volume is good  🙂
