Coconut is the single best ingredient to cook with.
Ok so you probably knew that last one. I know this is random but it all comes back to coconut.
I have a 3 kilo bag of coconut just begging to be used. This is my adaptation of the original coconut macaroon but with much less sugar and no flour. I wasn’t sure what these cookies would do in the oven but happily, they came out very light and very yummy.
I experimented with the last 1/2 cup of batter and refrigerated it. The cold dough was much more pliable (and less wet). I think it’s worth putting it in the fridge for 30 minutes and then rolling into balls before baking. If you try it, please let me know!
