Oatmeal Peanut Butter Almond Pulp Cookies
Happy Monday everyone! We had the dreariest weekend I can remember in a long time. It’s been raining and cloudy for almost 4 days now and although I love a good rainy day once in a while, this is becoming jump off the bridge weather. Not to mention that I have no dryer. Thank goodness for drop off laundry service.
Rainy days mean marathon sessions in the kitchen. I may just have a week’s blog worth of recipes from Saturday and Sunday alone 🙂 After the M&M birthday cake, I needed something healthier for myself to snack on and these were perfect.
Remember home-made Almond milk?
Well I made a double batch of milk this weekend so I had the pulp from 2 cups of almonds to deal with. This recipe seems like a lot of ingredients but it’s very quick and easy to come together. One bowl, two cookie sheet, yum cookies.
This time I didn’t even bother drying out the pulp which made things super simple.
First, eat as many as you can then hide a few and finally, let the husband see them. Finished.
