Rainbows and Granola

I’m always in awe when I see a rainbow.  As a kid, I always put rainbows in the same group as unicorns.   Unicorns in the same group as leprechaun’s with a pot of gold…..it’s just so much fun to believe isn’t it?    It’s not until the mean babysitter tells you it’s not true.      She tells you to grow up.

A coincidence that the most perfect half circle rainbow I have ever seen appeared over our balcony yesterday on St. Patricks day?

I think not.

Take that mean babysitter girl.

I’m very excited to share the next recipe, quinoa granola.

The first time I made it about a month ago….I burnt it.    I hate timers, I rarely follow recipes like I should and often pay the price.     I’d hate to think of the food I’ve quietly thrown out because my hot bath was more appealing than the 3rd batch of cookies in the oven.

This recipe however, was screaming at me…..”I’m tasty even burnt.”   “How good will I be not burnt?”.

So Once the carcinogenic batch was finally tossed, I couldn’t wait to try again and give it the full attention it deserved.

Pumpkin Maple Quinoa

Clean eating Chelsey has come up with an excellent granola.    Don’t mess around with this recipe….it’s perfect.

Seriously…make it.  I made two batches it was so good.

Make sure you follow the directions and mix this up every 10 minutes or you will not be happy when all of your work is smoking and good for nothing but the garbage.

Plain yogurt, cinnamon, chia seeds, coconut, blueberries and quinoa granola drizzled with home-made tahini. So good.

    Santa Clause…who was this mean babysitter girl?

      I don’t remember, I think she was actually Michelle Murphys cousin babysitting while they all went bowling. She was also the one who told us the tooth fairy was our mothers. dream crusher
