Banana Tahini Bread

I know I haven’t given you much time, but did you make the very yum tahini?

I promised you ways to use it so let’s get on with it shall we?

Banana Tahini bread

1 cup whole wheat flour

1 cup white flour

2/3 cups sugar

2 tsp baking powder

1 tsp baking soda

1 tsp salt

3 bananas

1/2 cup apple sauce

2/3 cups tahini

1/2 cup plain nonfat yogurt

2 eggs

2 tbsp milk ( I used almond milk)

4 tbsp honey

1/2 cup chopped walnuts

Preheat oven to 350 degrees

In a food processor combine bananas, tahini, yogurt, eggs, milk and honey.    Puree until smooth.

In a large bowl add flours, sugar, baking powder, soda and salt.    Stir to combine and add the wet ingredients.   Stir just until combined and then fold in chopped walnuts.

Pour this into whatever baking pans you prefer.  Muffin tins, cake pans or loaf pans.

I used a large rectangular cake pan lined with parchment paper.

Place on a cooling rack before slicing.

Like the fogging effect?  fancy huh?

 

Oh yeah…this was so good I even sent one of The teenagers downstairs with 3 big pieces for the new neighbours.    I’m feeling very June Cleaver from  Leave it to beaver.

I have a rating system for desserts which is based on the length of time it takes to get eaten.    1 day rates an excellent. 2 days rates a very good and 3 days rates a failure. A dessert in my kitchen on the third day is an epic failure.   This cake was excellent apparently.
