Loving on Soup
Another sweaty weekend (that I am not going to complain about), and I’ve been on a soup making mission. It’s summer here and yet I find myself craving curries, stews and soups.
It must be in my genes. Right now my ancestors would be scooping out the last of the cod in the salt barrels. The potatoes in the cellar would be starting to grow some serious roots and oranges were being treated as gold to hold off scurvy.
I have this strange urge to provide my
twelve 2 children with hot, nourishing meals to stay warm and make it to the spring thaw.
but mostly this recipe from The Whole Life Nutrition Kitchen looked totally appetizing and comforting that I couldn’t help myself.
I made a few changes….
Shitakes are the price of a small car here now so I used 2 large Portobellos for the stock. I then saved the Portobellos for my soup bowl at the end rather than add any more since I’m the only mushroom lover in the house.
In place of the mushrooms I added chopped spinach.
I loved the clean fresh taste of this soup and can imagine how healing it would be for anyone sick with the flu or a cold. I topped my soup with thinly sliced red cabbage and fresh coriander.
I feel comforted.
I also have happy soup belly.
