Miso and Peanut Coated Chicken Fingers

One thing I haven’t really experimented much with is Miso. Miso is a slow fermented soybean paste that is indispensable to Japanese cuisine. The exotic savoury, salty, malty, rich flavour, characteristic of traditional Japanese dishes owe their gusto to miso.      I have a recipe floating around in my memory of Miso being used as a coating for skewered salmon coated with sesame seeds.

I had miso but no sesame seeds.

I had peanuts but no salmon.

Who says I can’t improvise?

Miso and Peanut Coated Chicken Fingers

2 large skinless, boneless chicken breasts cut into strips

1/2 cup miso paste

1/4 cup water

1/2 cup chopped fine peanuts

1/4 cup whole wheat flour or oat flour

pinch (or more) cayenne pepper

Line a baking sheet or cookie sheet with parchment paper and preheat oven to 375 degrees.  Have 2 bowls ready.  One with miso and water that has been mixed well.   The other with peanuts, flour and cayenne combined.     Place chicken strips in Miso mixture and coat well  (you can marinate this for 2 hours prior if you have the time).  Using a tong, take chicken out of miso and place in nut mixture….shake the bowl and coat, then place chicken on baking sheet.

Bake until chicken is cooked but be careful not to burn the peanuts on top.   If they look too brown then turn off oven and let chicken continue to cook for 15 min.   For the girls I used soy sauce mixed with a bit of honey instead of Miso.

If you like wasabi then you need to try these chicken strips dipped in ketchup and wasabi.

I used 1/2 cup ketchup to 3 tsp wasabi powder but only add 1 tsp, stir well and taste before moving on.   I looove all things spicy and that includes the sinus clearing, eye watering, throat burning sensations that wasabi gives me.

I’m also obsessed with every single Housewives show that comes on repeat after repeat so that should tell you something about my  cringe factor taste.    Have you seen Kim sing “Don’t be Tardy for the party yet?”

    your link for that song didn’t work – but I have seen it its soooo bad lol. My favorite it Housewives of NY – I love Bethany!

      Oh crap…..I fixed it go and look again. She cracks me up with her big wigs and trying to be African American. Funny cause Bethany is one that I can’t stand…..I think I just got Bethany overload from her show…she’s so hard to take.
      I also love Ne Ne….I wish she was my friend 🙂

    Those look so good and I would give anything to have one of them right now. But the boy definitely would not eat them.

      You mean joey right?? no Joey wouldn’t but Jaques would….just don’t tell him it’s Miso. Alex and Jo would never have eaten these when they were younger.
