Bananas and Sunshine

When I look at my cute Iphone weather application each morning I sometimes laugh (sorry), sometimes I just shake my head and at other times I thank all the powers that be.

Today I said Thank you to whomever may be listening…. loudly.

Cities on my phone include Toronto                                     -20 giggling

Moncton NB                                                                               -22 small chuckle

Montreal                                                                                     -27 laughing my ass off

Edmonton oddly enough                                                          -5  shaking my head, no one should live there

And finally……………………Sydney Australia                +34  Thank you powers that be.  I owe you.

Here’s a recipe that’ll make you feel better.

So good Banana bread

I bought some over ripe bananas at the market today for $1.50.   When blended I had 5 cups of smooth mashed nanners.  I used all of them and baked 3 humongous loaves.

I think you should do the same but if you don’t like having the best ever banana bread ready to go in your freezer at any given moment than….

Maybe we shouldn’t be friends….

2 cups softened butter

1/2 cup coconut oil

2 cups cooking stevia

3 cups white sugar

10 eggs

5 tsp vanilla

5 cups mashed bananas  (I processed them until smooth)

8 cups whole wheat flour

2 cups white flour

5 tsp baking soda

2 1/2 tsp salt

5 tsp cinnamon

Blend the butter and coconut oil with sugars until creamy.  Add 2 eggs at a time blending well after each addition.    Add vanilla and beat again.

Get yourself a very big bowl and add all dry ingredients.   Stir to combine and then add your wet ingredients.   Fold the flour into the wet  just until combined.       Now you can get 3 more bowls and add your batter to each bowl evenly.  To each bowl you can add extras like walnuts, chocolate chips, any dried fruit, more spices, coconut, seeds or even just different extracts like almond, lemon or brandy.

Line your loaf or cake pans with parchment paper and pour each different batter combinations into pans.  Bake at 350 degrees until centre tested with a wooden skewer comes out clean (50-60 min).

This is really excellent banana bread, one of my favorites especially with a glass of Almond milk.

    My car would not start this morning with the automatic starter. It was too cold outside. This is the reason I have an automatic starter put on my car. It was 15 below.
