Spreading the recipe love

I get a lot of inspiration from other food blogs.

I especially like the ones with pretty pictures.

Like a recipe book, I just don’t trust someone who tells me to cook something that I can’t see.

What if it’s ugly once I’ve gone through all the trouble?

Joy the Baker takes beautiful food pictures.  That’s why this morning I made her Molasses bread.  Just because it was pretty.

Mine came out just as pretty.

I recommend toasting this the next day with any kind of nut butter you can find.

Dish by Trish also takes very nice pictures.  Trish also cooks healthy dishes, ones that inspire me. Her Cashew Red Quinoa inspired me to make a quinoa dish with Thai flavors as well.   I would have  just copied her recipe but to be honest, I was missing to many ingredients.

I’m glad I worked around it.

Quinoa with coconut milk and cashews

1 cup light coconut milk

1 white onion

1 clove garlic

1 inch piece of fresh ginger

1 small chili pepper

2 1/2 cups water

1 1/2 cups quinoa (I had white)

1 tbsp brown sugar

2 tsp salt

1 tsp pepper

The juice of 1/2 a lime

1/4 cup sliced dried apricots

1/2 cup chopped cashews

chopped cilantro

In a blender or magic bullet, add onion, garlic, chili and ginger.  Blend until you have a paste. Set aside.

In a large sauce pan add coconut milk and onion paste.  Bring to a simmer and then add sugar, water and quinoa.

Cover and simmer gently until quinoa is fully cooked.

Add cashews and lime  juice and stir. Serve in bowls and top quinoa with 2-3 tbsp of warmed coconut milk along with a sprinkling of fresh coriander.

I served this with a side of kale chips and it was sooo good.

    Thanks so much for the shout-out. I really appreciate it. Your take on the quinoa dish looks equally appetizing. I wanted to add ginger but I didn’t have any :-( Have a great weekend!!
