33 degree Oatmeal Muffins

This is not very feminine of me, but I’m sweating.   I sweat all day.

I shower in the morning, then I sweat.

I sweat shower after dinner, then I shower sweat.

Whatever.  Same thing.   It’s freakin hot and I still made muffins.

Oatmeal muffins

2 cups nonfat plain yogurt

2 cups quick  oats

1 egg and 2 egg whites

1/2 cup olive or coconut oil

1 tsp vanilla

2 cups whole wheat flour

1/2 cup white sugar or sugar substitute

1 tbsp baking powder

1 teaspoon salt

1 tsp cinnamon

Combine yogurt and oats in a large bowl and let sit for 15 minutes.

Into the same bowl add  the eggs, oil and vanilla.  Blend well.

Add dry ingredients and stir just until blended.  Now you can add just about anything to this muffin mix or…..nothing at all!

Pour into muffin tins and bake at 350 degrees until lightly browned and cooked through the center or just leave on the balcony for 5 minutes.   Be careful not to burn them.

Some ideas….

1/2 cup of dark chocolate chips

1/2 cup chopped dried apricots and 1/4 cup almonds.

1/4 cup raisins and 1/4 cup walnuts

You could even make these muffins savory by adding 1/2 cup grated cheese, 1/2 tsp black pepper and 1 tsp dried oregano but skip the vanilla and cinnamon.

I add 1/2 a square of 70% Lindt chocolate right in the middle of each muffin

I need a shower.

All this typing is making me sweat.

    Agreed. I feel bad complaining but sweat literally drips down my back all day long. You know when you have a nice refreshing shower and then you are sticky and yucky 5 min later? We’re really lucky so far though because it has cooled off every night and sleeping is good.

    these muffins easy to make. the recipe was well written and the pictures were fantastic. the muffins were scrumptuous and delicious (did i get it all michelle? wanna make sure i wrote everything you told me too…hah) seriously – the muffins were great. my 9 year old daughter loves them and so do i. we have had them for our ‘healthy’ snack every day at school this week. it was great to have all the ingredients here in my house.
