Leftover Turkey Slaw

If my stomach could talk, this is what it would have said to me at 4:30 a.m. this morning.

“Did you really think it was necessary to buy a head of cabbage big enough to feed a small town in Eastern Europe?”  ”Also, do you realize that you have now fed that cabbage to me in one form or another for 4 days in a row?”  ”What do you think I am? made of steel?”

I made a turkey on roids for Christmas and ended up freezing the last bit of breast meat.

Earlier this week there were the  Cabbage wraps and a big pile of fiber packed leaves left over.

So what does one do with leftover turkey and cabbage?

Why….Turkey Slaw of course.

Obviously…..geesh

Turkey Slaw

To the same bowl add the rest of the ingredients and mix well.

This is a complete meal and a great way to use up left overs.  This will be good for at least 2 days of lunches (sorry stomach).

Oh so yummy and even better the next day in a whole wheat wrap.

    Tried it last night and it was excellent! Big man ate 2 plates of slaw. After we had lentil soup.Watch out!

    This is great! I was just wondering what to do with some of the leftover roasted chicken we had from last night.I’ll definitely try this one. Thanks for sharing this!
