Date square cookies with muscle

Here’s the first thing I did with the lovely date butter…..

It’s close to Christmas and I’m feeling sentimental.

Eating date squares makes me miss my mom and baking date squares makes me miss my dad.  Missing everyone makes me want to eat date squares.     ??       Is that weird?

These come pretty damn close to curing my craving.

Date square cookies with muscle

1 1/2 cups uncooked toasted oats (large flakes) I toast mine just until lightly brown to bring out the nuttiness

1/2 cup vanilla protein powder (hemp, rice or soy protein is fine)

1/4 cup natural peanut butter (any nut butter…ew except sesame!)

1/2 tsp salt

1/2 cup water

Mix everything together starting with a wooden spoon and ending with your hands.   This mixture is very sticky because of the protein powder so I found that having a little bowl of water beside me to dampen my hands with really helped.    Form your dough into a big ball and prepare a cookie sheet with parchment paper.  Roll your dough into little balls.

Now with damp palms, press the balls fairly flat into discs.

Bake at 350 until crispy.  It only took about 10 min in my oven.

Let cool and top with date butter.

My new favorite cookie!   Since I’m the only one in the house who likes dates, I froze these and they were perfect!  With the protein powder added they also make a great pre or post workout snack.

Even if you’re not fan of dates, try these cookies with peanut butter or peanut butter and chocolate spread between two for a Reeces peanut butter cookie!    Yum
