Date butter

December 3, 2010

I’ve been waiting to finish this jar of date spread so that I could make my own.   I knew my own would be way better and I knew that mine deserved the title, Date butter.  Spread just sounds so…70’s.

Mine was way better.

My sister told me I was a butter freak.   I denied it but umm….I dunno, maybe.

Here’s how you it

2 cups of dates tightly packed

2 cups water

1/2 tsp salt

1 tsp cinnamon

3/4 cup chopped, toasted walnuts

Gently simmer everything except walnuts until dates are soft enough to stir into a paste.   This took me about 40-50 min and all I had to do was use a wooden spoon to turn it into butter. Once it’s cooled, stir in your toasted walnuts.  That’s it.  If you’re a date lover like me, you will be addicted to this stuff.

So now I bet your wandering, What Michelle, do I do with this crazy deliciousness called date butter?

Oh don’t you worry, I have 101 recipes to share using my date butter.

My head is all abuzz.

I may not sleep tonight.
