Sunflower butter banana bread
I finally got around to opening another one of the jars from my goodie box a few weeks back.
Not only is it ugly, but it tastes like regurgitated sunflower seeds. Sort of like mamma bird found it, chewed it up good and then flew back to the nest to feed baby bird.
I will not waste good
cement nut butter, no matter how bad it tastes. Instead I will do this,
then do this….
Let cool and do this….
Once that’s done, plate it up!

Whew! seemed like it was hard work but this was a super easy cake to make with healthy ingredients and sooo good! It came out very light and fluffy and best of all?? No sunflower butter flavor!
1 cup sunflower butter (can use all peanut butter or other nut butter but I had to get rid of it)
1/2 cup peanut butter
2/3 cup butter
2/3 cup baking stevia (or all white sugar)
2/3 cup white sugar
4 egg whites (or replace with 2 more eggs)
2 cups mashed bananas (I used 4 large ones)
2 1/2 cups whole wheat flour
1 cup white flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
Beat butter and nut butters until smooth. Add eggs, egg whites, sugars and mashed bananas. Beat until creamy. Add all other ingredients and stir until combined. pour into parchment lined cake pans, muffins tins or loaf pans. Bake at 350 degrees until cooked through the middle.
Let it cool before slicing and then quick! hide it from the one-armed bandit.
