Leftover bean Quesadillas

I had an Oprah moment aka light bulb moment.    In truth I like the ah ha! factor even better because that’s actually what I said sitting in front of my computer watching Star trek.    I don’t watch Star trek on purpose and usually try to avert my eyes to be truthful but there was a marathon going on and Steve has an injury which means I must relinquish all power of the remote control thanks to Mr. Guilt.  God I hate that guy!            So no.  My ah ah! moment did not come from Star trek (forgive the confusion) instead, it came from zoning out with that crap on the T.V.                         Thank you crappy T.V. for this very yummy

Black eyed pea quesadilla

2 large whole wheat pitas

a big serving of Black eyed pea salad

shredded cheddar cheese

plain non fat yogurt

Place first pita on a cookie sheet and cover with a good amount of beans.   Sprinkle with cheese, cover with 2nd pita and bake in a 350 degree oven until crisp and brown.      Slice into 4 triangles and serve with a dollop of yogurt.

Seriously good way to use up any left over beans!

And on day 4 Steve is definitely going  a bit stir crazy with instructions for strict bed rest and almost no movement of his arm. Not easy for anyone but especially difficult when you’re a spazz!   Spazz being my affectionate nickname for anyone who needs to move at all times.

And now…a week at home….for a guy who bikes 30 min to work……gym at lunchtime….10 hour work day….and a bike ride back home followed by beach patrol training until 9 p.m.        Wish me luck!

    Star trek is crap and the quesadillas look yummy. Steve’s hand on the other hand (?) looks painfull. This is life telling him to slow down and take it easy. How fun for you!

    I think he’s afraid if he slows down it means he normal. God forbid 🙂
