I went on a date

With an Orange cornmeal cookie. But first I had yet another jar to test out from my box of goodies.

I’m not sure what I was expecting with this one but as the ingredients say…..Dates and water.  You would be hard pressed to find a bigger date fan than me, but seriously people….a little imagination?

The usual taste test on the breakfast cookie produced exactly what I suspected.  Nothing.  No taste, no good.  A little sprinkle of coconut helped.

Now on the bright side of this very bland condiment, I have a gadrillion ideas swimming around in my internal recipe site….my brain that is.  A pity for the people who produced this yawn spread but a bonus for me so be on the lookout if you’re a date lover and even if your not cause you never know what you might be missing!

On to my date with Orange cornmeal cookies. Dairy free orange cornmeal cookies I should say.

I know I’ve really abused the orange season here but it seems to be lasting forever (which I love) but which mean I always have some on the table and inevitably always have a couple on the verge of orange heaven.  I can’t watch that happen.  Today I saved 2.

This recipe was adapted from Martha Stewart but as you can see, I’ve kind of changed it a bit   As with milk substitutions, there are a variety of dairy free spread products you can buy.  Right where you’d buy margarine there are different options and today I’m using one made with vegetable oil.


1/3 cup non dairy spread

1 orange zested

1/3 cup splenda (or icing sugar)

3 tbsp cornmeal (fine cornmeal)

1/2 cup whole wheat flour

Line a cookie sheet with parchment paper and pre heat oven to 350 degrees.  Using a hand-held mixer, blend spread, sugar and zest until creamy.  Fold in cornmeal and flour.   I made very small cookies because they are quiet delicate and managed to get 14 or 15 from the batch.  Roll them into little balls and using a spoon, make an indent in the middle.  Double this recipe and freeze if you like.

These were very much like a crumbly shortbread cookie and I’ll definitely be making them again.  Orange sherbert with 2 served alongside would be a nice light dessert but still look fancy and still dairy free.     Also, one of the easiest and quickest cookies I’ve ever made.

I’m thinking lemon and cranberries the next time.
