Barleymeal and papayas

My most fave grain is oat groats.  Oat groats rock and Oatgurt is the best way to eat them. Well rumour has it that my Vitamix should be arriving any day and I can’t wait because those groats must have one serious set of blades to turn them into the gurt part.   Until then barleymeal is keeping me very happy.   Barley is super healthy and a very misunderstood grain. Think about it? when do you eat barley?  Growing up I remember it as the chewy stuff in my moms beef stew. I didn’t know what it was but I loved the texture and now I think stew is just wrong without it.  But there are so many other ways to eat it and instead of your oatmeal this week, why not give barleymeal a try?

Today for lunch I had barleymeal sweetened with some Stevia, some blueberries and a dollop of Coconut chocolate butter and almond butter.

I like this even better than oatmeal! It’s chewier, heartier and it kept me fuller longer (Barley has a higher fiber content). Make a big batch and it’ll last for at least 5 days in the fridge.

What could be better than barleymeal? How about barleymeal and Papayas? They’re all over the place here now and über delicious!  Papayas come in 3 different sizes, small, medium and large – duh.   Seriously though there is a difference, small is darker in color and really sweet, medium can be iffy and should feel firm but not hard, not too overly sweet.  Large ones are often watery and a bit tasteless so I stick with the medium ones and just hope for the best.   Like Pineapples, you never know whatchurgonnaget.
