Frittatas and pilates

After running 3 k and doing shoulders I came home and decided to also put in my Pilates cd and do a 35 minute session.  For the last year or so I’ve dealt with on again, off again lower back pain as well as one super tight hamstring so I’ve been slowly incorporating Pilates and yoga into my routine.    I plan on trying Bikram yoga at a studio but first I really wanted to get familiar with poses and get used to stretching without moaning (and a bit of cursing) in the hope of sparing myself a teeny bit of embarrassment.   For the past couple of weeks I’ve done a simple Pilates with the band in my living room.

Even though this is beginners, it’s surprisingly challenging and only reminds me that I’m one big super tight elastic band!  I will persevere!

I was tired after all that and one of the meals I fall back on when dinner is looking like a chore is something with eggs.  Tonight a frittata.  Easy, fast and nutritious Frittatas are great for a quick meal.  I always use what’s on hand and tonight was no different.

Frittata recipe

Served with a green salad and  home-made bread, this is a nice, light dinner but still high in protein.

If you like your Frittata thick then just use a smaller frying pan.
