Lemon cake with a little gluten

Did you know that baking powder has gluten in it?  I didn’t!  then again, I’m fairly new to this and even though I’m on a bit of a successful gluten-free roll, I wasn’t prepared to risk a fluffy loaf with only baking soda.     You can substitute powder for soda but not the other way around, instead you can make your own baking powder by mixing 1/4 baking soda to 1/2 cup cream of tartar. Easy!     except I had no cream of tartar  😦   (I hate missing ingredients!).   So for now I took the opportunity to play around with another gluten-free ingredient.  Spelt.    But guess what?  then I read that spelt  is not gluten- free. Man! do I have a lot to learn.   So ok my cake is not even close to being gluten-free.   But spelt does contain more protein than wheat, and the protein in spelt is easier to digest. This means that some people who are allergic to wheat might be able to tolerate spelt.    So there!    My recipe is still a healthier version and I did learn a lot today!

Lemon spelt cake

1 cup whole wheat flour

1 cup spelt (or white or whole wheat)

2/3 cups sugar (or splenda)

1 1/2 tsp baking powder (or substitution as mentioned)

1/2 tsp soda

1/2 tsp nutmeg

1 tsp cinnamon

1 cup grated zucchini (I always leave the skin on)

1/4 cup canola oil (or olive)

1 egg

1 egg white

the zest of 2 lemons

juice of 1 lemon

1/2 cup yogurt (plain, vanilla or lemon)

Blend oil and sugar until creamy.  Add egg and egg white along with lemon zest, juice and yogurt then blend again.  Add all of your dry ingredients and when blended, fold in the grated zucchini.   Bake in a loaf pan, cake pan or make muffins.

The loaf turned out yummy.  The outside was crispy and brown (the spelt helps with this) and the inside was fluffy and not too sweet.   You could poke holes in the top of the warm loaf and brush on the juice of the other lemon mixed with a bit of sugar for an extra punch as well.      Oh and I do plan on doing this again gluten-free!

Aside from cake, we woke up this morning to a very cool sight.  A couple of hump back whales were playfully jumping around about a 1/4 mile out from our view.  This has made us finally decide to get a new lens for out camera.  Then I can share some pictures!
