Inside out Pizza
Panzerotti is what I keep trying to call it but Jojo insists (rather loudly) that it’s Inside out pizza so that’s what it is. Her and Steve liked the Cornmeal spelt pizza so much that they asked for pizza night again and it was a good way for me to use up left over pesto, tomatoes and zucchini since tomorrow is market day. It turns out Alex was not a fan of the chunky tomato sauce mixed into the pesto so she’s a no go tonight.
Since I used up all my cornmeal on the last batch I just made my normal pizza dough except I only use 1/2 cup of the white flour and replace the rest with whole wheat. For the Inside out pizza I roll the dough into large squares (4 really big ones or 5 smaller ones). Spread your sauce over half of the square and cover with what you would normally use as pizza toppings. I used chopped zucchini, tomatoes, tofu baked in tomato sauce and mild cheddar. Fold the crust over and seal with a fork. Cut 2 or 3 slits into the dough to let the steam escape and bake at 375 until crust is brown and crispy.

On the topic of pizza,
Last week the girls and I went for lunch to a local pizza restaurant where I just may have had the best pizza ever! Bondi Pizza makes one called The true vegetarian with spinach, shiitake mushrooms, grilled pumpkin, braised onions, tomatoes, olives, roasted pine nuts, goats cheese, shaved parmesan, pesto and Balsamic reduction. Whew! how’s that for a pizza? The crust is very thin and crispy and although it sounds like a ton of toppings, there is only a tiny amount of each so you could taste each one. I loved the pumpkin! I will definitely be doing a copycat version of this in the near future.
