Scoats

I used to make stir frys all the time, once a week at least but like anything if over done it’s gets tiring.  For me though, I am a serious creature of habit and probably much to my detriment because I can eat the same breakfast and lunch every day for…..years!   Once I find something I like I stick to it – and have a hard time letting go.     Last night I made a tofu stir fry and while eating it wondered why I stopped making them because it was so good!  I just made a very basic one with onions, ginger, garlic, broccoli, peppers and carrots.     I baked some firm tofu coated in soy sauce and that’s it.   You can add some sauce but I just ate mine with chopped peanuts and crunchy bean sprouts  (with tons of spice of course).Another meal I’ve been eating since the beginning of time is some combination of fruit, nuts, yogurt and oats.  I could eat grains all day long but oats win every time.   Today I found my new favorite!

I soaked some steel-cut oats in water over night and after draining most of the liquid I then processed until very smooth and thick.

Once this was done I placed the bowl covered with a paper towel in the dehydrator on low for about 3 hrs.    The oats formed a lot of crust which I then mixed in making it thick and almost ‘bread’ like.   Don’t worry if you have no dehydrator, just place it in the oven uncovered on its lowest setting until it becomes crispy on top and really thick.

I could be eating oats like this for the next decade!    Here I have a big messy bowl of Scoats (get it? Steel Cut oats?) with my regular fair, fresh berries,  goji berries, chia seeds, greek yogurt and big dollop of almond butter.  I think this is my favorite meal of the day for sure!

I’m very glad tomorrow is Friday because rumor has it we’re supposed to get summer weather this weekend here in Edmonton.  I’ll believe it when I see it  🙂
