Li’l energy balls

I have a husband with an insatiable appetite for anything cake, cookie or muffin.  This really is his only true vise and if he was an addict then I would be his dealer.  We have a strange relationship when it comes to food…..he wants me to stop baking because he likes it too much and yet he complains when I stop baking and I have to laugh when I watch him walking back and forth to the kitchen opening and closing the fridge and cupboards.      I love baking.  I love cooking but baking is my favorite and baking is tough to do a lot of when you’re trying to stay healthy and keep sugar at a minimum.    I would’ve fit right in as a mother of 13 ( like my grandmother) and baking bread daily to feed my children.     Now I try to only bake once a week and do it in the healthiest way I can without making it taste ‘healthy’.        Lucky for me I don’t have the same penchant for desserts as the man but I do like to have something small, sweet and handy to grab for an afternoon snack with coffee or a late night one with almond milk, so in keeping with the raw theme  (or as raw as I could get!)  I pretty much just measured a bunch of my favorite ingredients together and put them in the blender (or Vitamix).

  • 1/4 cup almond butter
  • 1/4 cup goji berries
  • 3 tbsp chia seeds
  • 1/4 cup raisins
  • 10 dates
  • 2 tbsp maca powder
  • 2 tbsp matcha tea (or spirulina)
  • 2 tsp cinnamon
  • 1/4 cup sunflower seeds
  • 1 tsp vanilla

As you can see, the dough is very dense so it rolls into little balls very easily

I was so disappointed when I realized that I had no coconut to roll these in!

These would have been good as is but I wanted to make them even denser and chewier so I dehydrated them for about 5 hrs on low.

When they were done, I refridgerated them until chilled.  They are super chewy and just sweet enough. Not sure what I would call these little energy balls but they’re perfect for a pre workout snack with a banana.  Next time I make these (and I will be making them again) I will leave out the almond butter because most of it dripped out while I was rolling them any ways.  I will also definitely be adding coconut and roll them in some as well.     I may even skip the dehydrating next time….the cool thing is how versatile this can get.    Chopped almonds, prunes instead of dates, chocolate chips……yum!
